Indian Style Chicken Open Sandwich

Ingredients

3 chicken breasts, cut in half

4 tbsp thick Yogurt

4 cloves of garlic, grated into a paste

1 thumb of ginger. grated into a paste

1 tbsp turmeric

1 tsp garam masala

1 tsp smoked paprika

1 tsp cumin

1 tbsp tomato puree

1 tsp honey

Salt and pepper

Sourdough bread, thickly sliced & toasted

Mango Chutney

1 large red fresh chilli

Watercress

Method

In a medium bowl, add your spices, garlic, ginger, honey , tomato puree, yogurt and sliced chicken and make sure it is evenly coated. Leave to marinate for 2 hours ( if not overnight). Meanwhile, turn on your oven to 190 degrees. Line a baking tray with baking parchment or foil.

When the chicken has finished marinating, place onto the prepared baking tray, and bake for 25-30 minutes. Take out, and leave to cool slightly before adding to your sandwich. To create your sandwich, slice your sourdough, and toast until golden brown. Add a heaped teaspoon of Mango Chutney and smother it on the top. Add your watercress, chicken then the sliced red chilli.
