Salted Caramel Apple Cake

Ingredients
(For the cake)
3 Bramley Apples, Peeled and Diced into 2cm chunks
225g Self Raising Flour
1 Lemon (grated lemon zest )
1 Tbsp Vanilla Essence
1 Tsp Cinnamon
1 tsp Allspice
115g, Diced and Chilled Salted Butter
110g Light Brown Sugar
2 Eggs
6 Tbsp Milk
1 Tsp Baking Powder
100g sultanas
Pinch of Salt
(For the Icing)
3 Tbsp Salted Caramel
150g Unsalted Butter
300g Icing Sugar
1 Handful Walnuts
Method
1) Turn on your oven to 180 degrees. Grease and line 20cm deep Cake Tin with baking parchment.  Cream together the Sugar and Butter using a whisk (or 2-3 minutes using a Mixer). Add the Eggs, and whisk again for another 2 minutes. Add the grated Lemon Zest, Milk and Vanilla Essence.
2) Peel and dice your Apples into 2cm cubes. Sieve your Flour, Allspice, Cinnamon, Baking Powder and Salt. Using a spatula, gently fold in the dry ingredients. Finally, add your diced apples and sultanas. Pour into your prepared cake tin and pop into your oven for 30-40 minutes. Take out when golden brown or until when pricked with a skewer and comes out clean. Leave the cake to cool in the tin.
3) To make the icing, add all of the ingredients together, and whisk together for 3 minutes until completely combined and fluffy.
Once the cake has completely cooled, slice in half and add half of your icing. Once the middle has been filled, add the top layer of the cake, and ice the top. Sprinkle walnuts on top and serve.
