Mac and Cheese is a meal that celebrates the best things in the world. Cheese and Pasta. It is one of those meals that is so easy to make, with little effort on your part, the only effort is to not eat it all in one sitting.
Ingredients (serves 6)
150g Strong Cheddar,
Grated50g Smoked Applewood Cheese (or any other smoked cheese)
1 Ball Mozzarella
500ml Whole Milk
3 Tbsp Plain Flour
2 Egg Yolks
1 Garlic Clove
2 Tbsp Salted Butter
50g Crusty Sourdough, blended to create Breadcrumbs (Shop Bought Golden Bread Crumbs works well too! )
1 Tbsp Oregano
1 Tbsp Dijon Mustard
Salt and Pepper
1) Turn on your oven to 200 degrees. Cube your crusty bread into cubes, and place them onto a baking tray and bake for 5-6 minutes until very crispy. Blend together with the Parmesan and Oregano to create your breadcrumbs. Set aside.
2) Boil your pasta until completely cooked, drain, and add a knob of butter in right at the end to prevent the pasta from sticking together, set aside.
3) To make the cheese sauce, place a medium saucepot on a medium heat. Add the Butter, Chopped Garlic and Flour. Stir until it has formed a very thick paste then add 100ml Milk in at a time, stirring continuously. Once you have achieved a thick sauce, add the Mustard and Egg Yolks and all of the Cheeses. Season, and stir to combine.
4) Get out a large, deep baking dish and add the Pasta and Cheese Sauce. Stir to combine and drizzle your breadcrumbs on top. Bake for 20 minutes. Serve immediately.
