My step by step guide to make this chunky Basil & Lemon Pesto. This is literally perfect spooned into pasta, in toasties with cheese or with fish/chicken.
2 large Garlic Cloves, Roughly Chopped
120 g Basil, Roughly Chopped
100 g Pine Nuts
2 lemons, the juice & Zest
Extra Virgin Olive Oil
100 g Parmesan
Salt & Pepper
Step 1. Prepare all of your ingredients. Chop the garlic into rough pieces and set aside, the same with the basil. Then juice 1of the lemons into a small ramekin and Zest it. Slice the other lemon in half. Grate 100g Parmesan and then set aside.
Step 2. Toast your Pine nuts into a dry sauce pan on a low heat until golden and fragrant. (4 minutes max).
Step 3. Using a Mortar & Pestle, crush the garlic and salt together until you have achieved a thick sticky paste.
Step 4. Add the Toasted Pine nuts and chopped Basil, and grind together until you have a very coarse paste.
Step 5. Add the Parmesan, Lemon Juice & Zest, and continue to grind together. Add around 6 tbsp Olive Oil and keep crushing together.
Step 6. Using a fork, mixing together to thicken. Season again to taste and serve.
