Spiced Apple Pop-Tarts with Salted Caramel Glaze

I am always feeling ridiculously inspired by anything Autumn/Fall flavoured . So, without further ado, I present to you (in my opinion), one of the best recipes I have ever created.
‘Spiced Apple Pop-Tarts with Salted Caramel Glaze’.
These take a little work, but boy oh boy you will be sure to impress your friends, family, colleagues, strangers…. You get the picture.

(for homemade apple sauce)
1 large Bramley Apple, diced into 2-3 cm slices
2 tbsp unsalted butter
3 cloves
1 tbsp (of each) ginger, cinnamon and nutmeg
100ml orange juice
1 roll of short crust pastry
1 egg yolk
(for the icing)
35g icing sugar
2 tsp milk
1 tsp Salted Caramel Essence (or a big tablespoon of Salted Caramel) . (optional cinnamon stick for decoration)


1) Heat your oven to 190 degrees and grease a baking tray.

2) To make the homemade Spiced Apple Sauce, simply peel the Bramley apple, and dice into small chunks (2-3 cm) and add all of the ingredients together and leave to stew for 30 mins. Leave to cool.

3)Unroll the shop bought pastry, (make sure it’s around 3-4 mm thick) and slice into 16 small rectangles, (one of the bottom and one of the top), this will make around 8 little Tarts.
Place the slices onto the baking tray, and using a teaspoon, spoon in your homemade apple sauce in the center of eight chosen slices.

4) Top with a similar sized slice of pastry. Using a fork, crimp the edges together to make a pattern and to seal in the jam. Poke three holes in the top of the tarts (so it won’t explode in the oven). Brush with an egg wash and bake for 10-12 minutes. Leave to cool completely before adding your icing.

5) To make the icing, add all of the ingredients together and drizzle on top of the pop tarts.
Add 1/2 brown sugar into each tart then put these under under the grill for 2-3 minutes until the sugar had started bubbling to caramelize the sugar for extra crunch.
