Easy Baked Marmalade Rhubarb

Here is a step by step guide to make delicious baked ‘Marmalade Rhubarb’. This can be spooned into creamy porridge, added into a crumble, and delicious with some granola. The possibilities are endless!

600g Pink Forced Rhubarb
2 Seville Oranges
1/2 Teaspoon of Powdered Ginger
4 Tablespoons White Caster Sugar
Step 1. Prepare a baking tray and line it with parchment paper. Turn on your oven to 170 degrees. Chop the Rhubarb into chunky pieces (around 6-8cm).
Step 2. Halve the two Seville Oranges and squeeze over the Rhubarb. Use your hand underneath to catch the seeds.
Step 3. Teaspoon the Sugar and the Ginger. Place into the oven for 20 minutes.
Step 4. This is where you can get creative, and use it for whatever takes your fancy!
Serving suggestion, 40g Pecan & Date Granola, Creamy Greek Yoghurt and 1 heaped Tablespoon of the Baked Marmalade Rhubarb & Juices.
