Chicken, Banana & Tarragon Gravy.

As part of my unusual pairings I did this year, this was one of my favourite sauces. Team with with Roasted Chicken or BBQ Banana Chicken ( Recipe for my BBQ Banana Chicken is also on here).


Ingredients ( serves around 4 )

5 Tablespoons of Rubies in The Rubble Banana Ketchup

3 Fat Garlic Cloves, Grated

400ml Strong Chicken Stock

15g, finely chopped Tarragon

1 Spring onion, chopped

1 Tbsp Dried Oregano

1 Tbsp Chopped Fresh Parsley

1 Tbsp Lemon Juice

15g Salted Butter

100ml Double Cream

Salt& Pepper to taste


1) Finely chop your Garlic and Spring Onion, and add to a small saucepan. Add 1 tablespoon of olive oil, and gently fry on a low heat for 1 minute.

2) Chop the Tarragon & Parsley, and  add to the saucepan.Immediately ad the chicken stock, and continue to cook for 5 minutes. Add the Banana Ketchup , Lemon Juice  & Oregano, and stir in.

3) Add the Butter and Cream at the end, season with Salt & Pepper to taste, and serve immediately.
