This little snack is perfect for a savoury breakfast, light lunch or snack.
Ingredients ( serves 2)
2 Slices of Rye Bread
10 cherries, de-stoned and halved
The zest of a 1 lemon
1/2 teaspoon Oregano
60g Goats Cheese
20g Petit Pois , partly thawed ( for added texture)
Mixed Bistro Salad
Salt and Pepper to taste
Toast the rye bread slices and get out the Petit Pois from the freezer and allow to thaw slightly.
In a small bowl, add the goats cheese, 1/2 the lemon zest ,oregano, salt and pepper. Stir to combine.
When the toast is ready, serve onto a plate, starting with the rye toasts, goats cheese, salad, cherries and peas. Top with a pinch of leftover lemon zest. Serve with a drizzle of Sesame Oil or Balsamic Vinegar.
