Creamy Shiitake Mushrooms, Cavolo Nero Spaghetti.

Ingredients (serves 4)

250g Shiitake Mushrooms, ( half the larger ones)
60g Cavolo Nero
4 Garlic Cloves, chopped
30g Salted Butter
150g Cream Cheese
40g chopped Chives
1 tablespoon Thyme & Oregano (each)
200g Grated Parmesan
Salt and Pepper to taste
200g Spaghetti
Method
Turn on your hob, and add water up to 3/4 full to your saucepan, and had 2 tablespoons of salt. Wait for it to boil before adding your pasta.
Turn on your frying pan and add 2 tablespoons of olive oil. Add your chopped garlic and allow to fry for 1 minute.
Add your Shiitake Mushrooms to the garlic, and cook for 4 minutes until softened and fragrant. Finally add your Cavolo Nero. Add the butter and turn off your saucepan.
Check to see if your pasta is ready, if it is, save around a cup of water, this will help thicken your sauce.
Drain the spaghetti, and add it to your saucepan containing the cooked garlicky mushrooms. Add the cup of reserved pasta water, cream cheese, chives, herbs, and seasoning. Top with an extra grating of Parmesan and serve immediately.
