Zesty Pancakes

Zesty Pancakes with Sticky Orange Pears. 🥞

( for the pancakes)
250g Plain Flour
1/2 tsp Baking Powder
2 tsp Golden Caster Sugar
1 heaped tablespoon Aquafaba Mayonnaise
300ml almond milk ( or any dairy free milk of your choice)
The juice and zest of 1 orange
1 tsp Apple Cider Vinegar
Pinch of salt
Coconut oil ( for frying) ( for the sticky pears)
2 pears, peeled and quartered
The juice of of 2 oranges and the zest of 1
2 tbsp coconut cream
6 tbsp Maple Syrup
2 tbsp coconut oil
Pinch of salt
To make the sticky pears, start with placing the maple syrup , orange juice & zest, coconut oil , salt  in a non stick frying pan. Allow to completely caramelise, then add the coconut cream.
Peel , quarter and core the pears, and add them to the caramel, allow them to be completely submerged and coated in the sauce. Leave to cook on a low heat.
In a large bowl, add all of your dry pancake ingredients together using a sieve , using a whisk to make sure everything is equally mixed. In a jug add your wet ingredients. Leave for 10 minutes before adding to the dry ingredients. Leave to the side for 15 minutes, to let the mixture to slightly bubble. It is important to not over mix this batter.
Using a non-stick frying pan, add a generous tablespoon of coconut oil, and using a medium ice cream scoop ( so it will always achieve perfectly equal results), scoop out some of your pancake batter.
Cook until small bubbles appear on the surface of each pancake. This should take around 35-40 seconds. Flip immediately and cook for around 20 seconds. Repeat to make the rest of the pancake stack.
Serve by stacking them high, a generous drizzle of the zesty sauce, with the pears and an orange slice for extra zing!
